In the throes of record breaking heat in the Finger Lakes yesterday, I found myself contemplating the appropriate food to eat during these exhaustive, hot summer days, as I am sure there will be many more to come. I had just picked up my share of fresh organic vegetables from the local CSA, and came home with bags of spinach, radishes, strawberries, raspberries, cucumbers and so much more. This selection of produce was begging to be turned into a bright, crunchy, sweet yet earthy summer salad. The perfect light meal for a muggy day! After combining all the ingredients, adding pecans and grapes that I had at home, I was thrilled to remembered that the day before I had brought home some of Villa Bellangelo's Artisanal Olive Oils. I found in my pantry the Sweet Balsamic Olive Oil, the Citrus Balsamic Oil, and the Tomato Basil Oil. Going along with the salad's fruit theme I grabbed the Citrus Balsamic oil and lightly drizzled some over the colorful bed of greens, fruit and pecans to create the perfect meal to brighten up a rather humid evening. The last decision I needed to make was what to fill my wine glass with, and that was effortless. Chilled, a bit bubbly and oh so good, a glass of Villa Bellangelo 2011 Moscato brought the entire meal together flawlessly! At 5.5% residual sugar, the sweetness of this wine danced with the earthiness of the cucumbers and spinach and the slight carbonation turned this sweet wine into something crisp and wonderfully refreshing. I would have also enjoyed this salad with our 2011 Gewurtztraminer !
